With our “Snow Day” today in Minnesota, I figured, what better day than today to take the Magic Bullet out of the box (the one I got as a birthday gift 2 months ago…)!?
I decided to break it in with a festive pumpkin mousse snack! Okay, that’s a lie—I intended for it to be a smoothie, but when it came out with mousse consistency, I added a few chocolate chips and embraced it! 🙂 The great news is that it’s not only delicious, it’s PFC balanced, gluten free, dairy free, egg free, soy free, etc., etc. and it’s gut healthy with the glutamine bonus! 🙂
Here’s what I threw together (THE RECIPE!) for Pumpkin Mousse:
- 1/2 cup pumpkin (I used canned)
- 3/4 cup coconut milk (full fat)
- 1 spoonful (probably a Tablespoon) honey
- 1 scoop protein powder (~20 grams)
- 2 teaspoons Pure GlutaPowder™
- 1 teaspoon cinnamon
Optional (best part!): Topped with Enjoy Life chocolate chips… yum! Enjoy and stay warm!
Looks yummy. What’s is the purpose of the glutamine?
Thanks! It is yummy 🙂 The L-Glutamine is for added gut health benefit (you could leave it out if you desire!)
I was looking at the LC cruise and listened to your presentation.. how awesome to see a LC dietician AND someone from Minnesota (I went to Bloomington Kennedy and am a Gopher).. thanks for bucking the system and bringing truth and sanity!
Thank you for watching my presentation and for the feedback! Small world (my dad went to Bloomington Jefferson)
This looks SO good! Adding this to my list of things to make. 🙂
This looks amazing!
I am a registered dietitian in Iowa in a campus setting and this is a recipe that I am going to sample a the rec center! I think this would make a great post workout drink for students.
Love reading your blog and thanks for the recipe!
Cassie,
I have been eating PFC for about a month now. I’m staying full for 3-4 hours after meals but only seem to stay full for about an hour after snacks. I am following the specifications in your PFC Part 2 post, even copying some of the snacks you outlined. What am I doing wrong? Also, in this yummy looking mousse, will the honey not raise blood sugar levels or is the fat cancelling that affect?
Hi Lorraine! Congrats on your first month of PFC! I’d be curious as to what you are specifically eating in order to troubleshoot what you might be doing wrong. I’m unable to provide individualized recommendations outside of a coaching appointment, and would encourage you to set one up so that we can help you figure out the types and amounts of foods that will help you reach your goals! Just email [email protected]!
And to answer your question, yep the healthy fat helps to buffer the effect of the sugar!
YES!
